Mean Green Smoothie

Serves 2

Ingredients

  • 1½ cups spinach
  • ½ cucumber
  • 1 stick celery
  • 1 tbsp lemon juice
  • 1 banana
  • ½ pineapple
  • 2 tbsps chia seeds
  • 1 cup almond milk

Method

  1. With a sharp knife chop spinach, cucumber, celery, banana and pineapple into similar square inch pieces.
  2. Place all of the ingredients into a blender, including the water and optional ice, blend for 30-60 seconds. Then add the lemon juice, half the almond milk and chia seeds. Continue to blend until smooth.
  3. Add the rest of the almond milk and blend until it’s very smooth.
  4. Pour into a glass and garnish with a celery stick.
  5. Drink and enjoy.

Beet the Blues Smoothie

Serves 1

Ingredients

  • 3 carrots
  • 1 beetroot
  • 5 cm fresh ginger
  • 1 apple
  • ½ cup apple juice

Method

  1. Wash and peel the carrots, beetroot and apple then chop into similar size pieces. Remove the skin from the ginger.
  2. Put all ingredients in a blender or mixer and blend until smooth, add ½ a cup of apple juice if needed to get a smooth blend.
  3. Get a large bowl and use a fine mesh strainer to pour out the juice though the strainer. Use a spatula to press the pulp down and squeeze the juice out.
  4. As an option, save and add the pulp for a thicker mix. Pour your juice into a glass.
  5. Drink and enjoy.

Avocado and Red Berry Smoothie

Serves 4

Ingredients

  • 400ml semi-skimmed milk
  • 300g frozen summer fruits
  • 1 avocado, peeled and stone removed
  • 2 tbsp clear honey
  • 1 lemon, juice only

Method

  1. Put all the ingredients except the lemon juice into a blender and whizz until thick.
  2. Add the lemon juice to taste, blend again then pour into four glasses and serve.
