Traditionally, wine and cheese from the same region would be served together. Now though, with the surge in British producers, we're big fans of crumbling, slicing and nibbling cheese from around the UK with our wines. A rule of thumb is to go for sharp, tangy wines with creamy and soft cheeses, and plump for reds and mellow wines with harder varieties.

For a cheeseboard, a good rule is to have three varieties – a hard cheese such as Cheddar, a soft cheese such as Brie, and a blue cheese. Allow 70g per person if serving as a course at the end of a meal. Remember to take out of the fridge an hour before serving (but keep it covered) to allow the flavours to develop. Store leftovers in an airtight container in the fridge.
