What says ‘I love you’ more than serving up your lovers fave dish? Whether they crave a brekky muffin or opt for ramen and spring rolls, there’s no need to fork out… Whip up something special this Valentine's Day with ingredients shopped in store, because you can’t ask for seconds in the takeaway! 


Love Muffin (aka Cheesy Bacon Muffin)

Serves - 2 

Cooking Time - 30 mins

Ingredients

  • 2 bread muffins, cut in half
  • 2 frozen hash browns
  • 8 streaky bacon rashers
  • 2 tbsp olive oil
  • 2 medium eggs
  • 2 cheese slices

To serve:

  • Sauce of choice

Method

  1. Pre-heat your oven to gas 7, 220°C, fan 200°C and line a large and medium baking tray with baking paper. While heating, use a heart cutter/knife to cut a heart-shape out of the centre of each muffin lid.
  2. Pop your hash browns on your medium baking tray and rashers on your large and pop in the oven for 20 mins. Turn your rashers half-way!
  3. When your hash browns and rashers are 5 mins from being done, heat your oil in a large, non-stick pan over a medium heat, and crack both eggs in- fry for 30 seconds. Whilst the white is only semi-set, top each egg with your muffin top so that each yolk is in the centre of each heart hole within the muffin. 
  4. Fry for a few mins before adding your muffin bottoms to colour slightly for a further min. Once your egg white is pretty much set, use a spatula to pop your muffin bottoms and tops next to one another on a baking tray. Remove your bacon and hashbrowns from the oven once ready.
  5. Spread each bottom with your sauce of choice followed by a cheese slice, crispy bacon and a hashbrown before popping back in the oven for a few mins until your cheese has melted and egg white within your lid is fully set.
  6. Remove from the oven, carefully top each with your eggy lid and take to your loved one in bed with a steaming cuppa for the perfect fakeaway start to their Valentines morning!

Lovingly Wrapped Fish & Chip Gyro

Serves - 2 

Cooking Time - 25 mins

Ingredients

For the gyros:

  • 6 chunky cod fish fingers
  • 200g frozen chips (skin on are best)
  • 1 tbsp peri peri seasoning

For the Zinger sauce:

  • 3 tbsp ketchup
  • 2 tbsp mayonnaise
  • 1.5 tbsp chilli sauce
  • 1 tbsp vinegar

To serve:

  • 2 flatbreads
  • 1/3 lettuce, finely shredded
  • 1 small red onion, finely sliced
  • 2 plum tomatoes, sliced
  • White parchment to wrap (why not write a small love note onto the parchment for an extra personal Valentine's touch?)

Method

  1. Pre-heat your oven to gas 7, 220°C, fan 200°C. Pop your chips and fish fingers on separate baking trays and pop in the oven for 18 mins/as per package instructions.
  2. Meanwhile, in a small bowl mix all Zinger sauce ingredients plus a pinch of salt and pepper and pop to one side. Heat a griddle pan over a high heat and char your flatbreads for a minute on each side.
  3. Remove your fish fingers and chips from the oven and sprinkle your chips all over with Peri Peri seasoning plus a pinch of salt and pepper.
  4. Lay your flatbreads down, dollop with Zinger sauce followed by lettuce, onions, tomatoes, seasoned chips and fish fingers broken into chunks.
  5. Roll up, wrap in your love note and enjoy a big Valentine's night in!

 


Currywurst For Two

Serves - 2 

Cooking Time - 35 mins

Ingredients

  • 250g frozen chips
  • 6 pork sausages
  • 1 tbsp olive oil

For the caramelised onions:

  • 1 tbsp olive oil
  • 2 red onions sliced
  • 1 tbsp brown sugar
  • 2 tbsp balsamic vinegar

For the sauce:

  • 1 tbsp olive oil
  • 1 white onion finely diced
  • 2 garlic cloves minced
  • 2 tsp mild curry powder
  • 1 tbsp brown sugar
  • 50ml orange juice
  • 1 tbsp tomato paste
  • 200g tomato ketchup
  • 2 tbsp balsamic vinegar
  • 2 tsp Worcester sauce
  • 1 tsp American mustard (optional)

Method

  1. Pre-heat your oven to gas 5, 190°C, fan 170°C. Pop your chips on a lined baking tray and your sausages on another. Drizzle your sausages with 1 tbsp olive oil and a pinch of salt and pepper.
  2. Pop your sausages in the oven and cook for 25-30 mins until your sausages are cooked through (remember to turn half-way). After 5-10 mins of being in the oven add your tray of chips (check your cooking instructions on the packet for timings).
  3. Meanwhile, onto your caramelised onions! Heat 1 tbsp of olive oil in a medium, non-stick pan over a medium heat, add all caramelised onion ingredients and cook for 15 mins, ensuring to stir every now and then.
  4. While your onions caramelise, and your sausages and chips bake you can make your sauce! Heat 1 tbsp of oil in a medium, non-stick pan over a medium heat, add your onions, garlic, curry powder and brown sugar and fry for until softened, caramelised and fragrant.
  5. Add all other sauce ingredients, seasoning and 50-100ml water to loosen and simmer on a low heat until all other elements are ready (add more water if too thick).
  6. Remove your sausages and chips from the oven and load into two bowls, chop your sausages into chunks and pile onto your chips. Finish with a heart-shaped helping of currywurst sauce and caramelised onions and tuck into a German street-food fave this Valentine's. 

 


Be my Ramentine

Serves - 2 

Cooking Time - 30 mins

Ingredients

For the spring rolls (optional):

  • 500ml vegetable oil for deep frying plus a tbsp for veg
  • 150g leftover veg, finely chopped (e.g. carrots, onions, cabbage, peppers, mangetout, mushrooms etc...)
  • Handful cooked prawns, chopped (optional)
  • 2 tbsp soy sauce
  • 3 tbsp oyster sauce
  • 3 spring roll sheets defrosted

For the ramen:

  • 2 packets instant ramen noodles
  • 2 tbsp sesame oil
  • 2 tbsp veg oil
  • 4 garlic cloves minced
  • 3 spring onions finely sliced plus extra to garnish
  • 1 tsp chilli flakes
  • 1 tsp sesame seeds plus extra to garnish
  • 1 tsp ground black pepper
  • 1 tbsp chilli sauce
  • 3 tbsp dark soy
  • 1 tsp rice wine vinegar

To serve:

  • Sweet chilli sauce for dipping

Method

  1. Heat 500ml veg oil in a deep pan over a medium heat, line a baking tray with baking paper and pre-heat your oven to gas 3, 160°C, fan 140°C.
  2. Meanwhile, heat a tbsp of veg oil in a large, non-stick pan/wok over a medium heat and add your veg. Stir-fry for 3-5 mins until slightly softened and stir through your prawns (if using), oyster and soy sauce. Set aside to cool.
  3. Cut each pastry sheet in half and brush around the edges with a little water. Lay each sheet horizontally and pop a tbsp of cooled filling in the centre. Roll the bottom edge upwards and over the filling, fold in the ends and roll into a tight cylinder (you may need to brush with more water to seal). Repeat with the remaining filling and pastry sheets. 
  4. Once your oil is hot carefully drop in your spring rolls (you can check by dropping in a breadcrumb- if the breadcrumb sizzles and floats it is ready). Cook for 3 mins until crispy and golden, remove with a slotted spoon and lay on your baking tray. Cover with foil and pop in the oven to keep warm until ready.
  5. Onto your noodles! Cook as per package instructions, drain (retaining water) and pop to one side.
  6. Heat your sesame and veg oil in a non-stick pan over a medium-high heat until hot. Whilst waiting for your oil to heat mix all other ingredients together in a separate bowl.
  7. Once your oil is hot, add your mixed ingredients, give a quick stir, add your noodles and toss. Add a little of the noodle water to loosen at this point if needed.
  8. Remove your spring rolls from the oven and pop on a sharing plate with a ramekin of sweet chilli. Divide your noodles into bowls and sprinkle with sesame seeds and spring onion for the ultimate take-out in this Valentine's!
