National Vegetarian Week calls for something new on our make-it-yourself menu. These three Asian-style dishes take under 30 minutes to prepare and cook, so you’ll be curled up with a DIY dish faster than you can say ‘Chinese takeaway’.

Veggie Tofu Pad Thai recipe

You’ll need:

  • 1 lime, finely grated zest and juice
  • 2 tbsp ketchup
  • 2 tbsp light soy sauce
  • 1 tbsp demerara sugar
  • 3 tbsp sunflower oil
  • 300g tofu, cubed
  • 200g carrots, peeled and cut into matchsticks
  • 1 red pepper, deseeded and thinly sliced
  • ½ Savoy cabbage, shredded
  • 300g straight-to-wok rice flat rice noodles
  • 6 spring onions, finely sliced
  • 150g beansprouts
  • 50g peanuts, choppe
  • 2 tbsp fresh coriander, chopped

Chinese-style Mixed Vegetables with Cashew Nuts recipe

You’ll need:

  • 2 tbsp vegetable oil
  • 100g cashew nuts
  • 1 clove garlic, peeled and finely chopped
  • 1 knob fresh ginger, peeled and finely sliced
  • 125g baby corn, sliced lengthways
  • 1 pack Chinese style stir fry vegetables
  • 115g mixed mushrooms
  • 1 tsp sugar
  • 1 tsp light soy sauce
  • 1 tsp dry sherry
  • 5 tbsp vegetable stock, made from half a cube
  • 1 tsp cornflour, mixed with 1 tsp water
  • 1 dash sesame oil, to taste

Oriental Vegetable Spring Wraps recipe

You’ll need:

  • 8 Mission Deli wheat & white wraps
  • 1 tbsp olive oil, plus extra for brushing
  • 125g carrot
  • 150g red onion
  • 150g red & green pepper
  • 2 cm root ginger, peeled and finely chopped
  • 1 clove garlic, finely chopped
  • 25g coriander leaves, roughly chopped
  • 2 tbsp sesame seeds, lightly toasted
  • 1 tbsp soy sauce
  • 1 tbsp sweet chilli sauce
  • 2 tsp sesame seed oil
  • 1 tbsp rice wine vinegar
