School's out...which means you might just need an idea or two to keep the kids happy. If the weather’s not playing ball (or they’re not), this simple recipe doubles up as a fun activity to put bums on seats - and delicious treats on plates.  


Chocolate Eton mess recipe

You'll need:

  • 200g fresh strawberries
  • 5 mini meringue nests
  • 4 tbsp chocolate sauce
  • 200ml low fat crème fraiche
  • A close eye on the kids at all times

Method

  1. Crush the mini meringue nests in a mixing bowl and stir in the cream.
  2. Hull and halve most of the strawberries for the pudding, toss the halved strawberries into the meringue mixture and carefully spoon into a dish big enough for two to share. Then decorate with the whole strawberries.
  3. Keep chilled until you’re ready for your dessert.
  4. Drizzle over the chocolate sauce just before serving.
