Breakfast Calzones

Cook time: 20 minutes
Serves: 8

Ingredients

  • 4 Sausages
  • 7 Large Eggs
  • 160g Baby Spinach
  • 60g Ricotta
  • 125g Grated Cheddar
  • 400g Pizza dough

Method

  1. Cook the Sausages and cut down the middle in to halves.season and leave to rest.
  2. Scramble 6 of the eggs & rictotta, season and leave to rest.
  3. Thinly roll out the pizza dough and cut in to squares approx 6 inch. layer each square with the spinach leaves.
  4. In 4 of the pizza dough squares, equally place the sausage halves on top of the spinach, sprinkle over the cheese. Brush the edges of the pizza dough with an egg wash, fold over the pizza dough, crimp the edges to make small calzones.
  5. In the remaining 4 pizza dough squares, equally place the egg mixture on top of the spinach. Brush the edges of the pizza dough with an egg wash, fold over the pizza dough, crimp the edges to make small calzones.
  6. Cook for 5-10 minutes or until the pizza dough is cooked through and golden brown. Serve hot with a garnish of your choice.
  7. Tip: For Gluten free option, use Morrisons Free From Pizza dough mix.

New York-Style Pastrami Bagel

Cook time: 10 minutes
Serves: 4

Ingredients

  • 6 whole bagels
  • 4 tbsp cream cheese
  • 4 tbsp piccallili
  • 1 bag spinach, rocket and red chard
  • 4 slices edam cheese
  • 12 slices pastrami
  • 1 small cucumber, sliced

Method

  1. Cut the bagels in half and toast them lightly under the grill.
  2. Spread the bottom half of each bagel with cream cheese. Top with piccalilli and a handful of salad leaves.
  3. Lay a slice of cheese over the salad and top with plenty of pastrami, some cucumber and onion. Season lightly and finish by adding the bagel lid.

Spicy Cajun Hot Dogs

Cook time: 20 minutes
Serves: 4

Ingredients

  • 75g Tomato Ketchup
  • 4 tbsps Schwartz Cajun Seasoning - Extra Spicy
  • 2 tsps Brown Sugar
  • 4 Hot Dog Sausages, Frankfurters of American-style Hot Dogs
  • 1 Red Onion, cut into 1.5 cm slices
  • 125g Dill Pickles, chopped
  • 4 Hot Dog Buns, split

Method

  1. Pre-heat the barbecue.
  2. Stir together the ketchup, Extra Spicy Cajun Seasoning and brown sugar until blended.
  3. Grill the hot dogs, turning occasionally, for 3-5 minutes or until lightly charred and just cooked through. Brush the Cajun ketchup mixture all over the hot dogs and move them away from the heat source. Cook, turning occasionally for 1-2 minutes or until crispy, golden and caramelized.

Chilli Cheddar Steak Burger

Cook time: 30 minutes
Serves: 4

Ingredients

  • 4 British steak burgers
  • 4 The Best brioche buns
  • 4 slices chilli cheddar
  • 8 leaves lettuce
  • 1 mayonnaise
  • 1 pickled gherkins, sliced
  • 1 red onion, thinly sliced

Method

  1. Barbecue the burger until full cooked through.
  2. Add a slice of cheese on top of the burger whilst still on the barbecue, allow to melt for approx 2 minutes.
  3. Meanwhile spread the mayonnaise onto the burger bun bottom and add lettuce.
  4. Take the burger from the barbecue and place on top of the bun base.
  5. Garnish with the gherkins and red onion.

Red’s Chicken Twice Pizza

Cook time: 50 minutes
Serves: 2

Ingredients

  • 3 Large Chicken Breast
  • 1 tbsp Olive Oil
  • 3 tbsps Red's Unholy BBQ Sauce
  • 60g Medium Cheddar Cheese , grated
  • 60g Mozzarella Cheese
  • ½ Small Red Onion, sliced into rings
  • ½ Red Pepper, sliced
  • 1 tsp Dried Oregano
  • 2 tbsp Fresh Coriander

Method

  1. Preheat oven to 200C/400F.
  2. Wrap 2 of the chicken breasts in cling film and flatten them with a rolling pin into one thin overlapping base about ¼ inch/7mm thick.
  3. Season with salt and pepper then sandwich between two pieces of oiled greaseproof paper onto a baking sheet and bake for 10 minutes.
  4. Slice the remaining chicken breast into 2 inch strips and fry on high heat for 1 minute with the red pepper. Add 2 tbsp Unholy BBQ sauce and the red onion, and fry until the chicken is cooked through and the onions and peppers are softened.
  5. Take the chicken base from the oven to cool, removing the greaseproof paper.
  6. Place the sautéed chicken, onion and red pepper onto the chicken pizza base, layer on the cheddar and mozzarella and sprinkle over oregano.
  7. Pour the remaining 1 tbsp Unholy BBQ sauce on top of the cheese, season with salt and pepper and bake in the oven at 200C/400F for 5 minutes. Once cooked, remove from the oven, garnish with chopped coriander and slice up using a pizza cutter.

Chocolate Chip Cookie Ice Cream Sandwich

Cook time: 30 minutes
Serves: 4

Ingredients

  • 125g salted butter, softened
  • 25g caster sugar
  • 55g soft brown sugar
  • 75g self raising flour
  • 110g rolled oats
  • 50g chocolate chips
  • 4 scoops ice cream, of your choice

Method

  1. Preheat the oven to 160C fan/180C/gas 4.
  2. Place all the cookie ingredients into a food mixer. Mix on a low speed until a soft dough is formed. Alternatively, you could combine all of the ingredients in a mixing bowl using a spoon.
  3. Roll the dough into a sausage shape, approximately 12cm long, and wrap in baking parchment. Chill in the fridge for 10 minutes.
  4. Line two baking trays with baking parchment.
  5. Slice the chilled cookie dough into 8 circular discs. Flatten each disc so it's 1cm thick. The cookies will spread during baking so ensure you leave space between each cookie.
  6. Bake for approximately 15-18 minutes or until the cookies are golden around the edges. Allow cookies to cool completely.
  7. Scoop your favourite ice cream onto the base of a one cookie. Place a second cookie on top and push down to create a sandwich.
  8. Repeat and place the cookie ice cream sandwiches in the freezer for 10 minutes.
  9. Remove from the freezer and enjoy.

Ingredients

  • Rocky Mountain Mega Marshmallows
  • Reese’s Peanut Butter Cups
  • Ritz Breaks Original

Method

  1. Heat marshmallow over an open flame until it begins to brown and melt.
  2. Sandwich Reese’s Peanut Butter Cups between two Ritz crackers and hot marshmallow.
  3. Allow marshmallow to cool a little before eating.
